Blackened Drumsticks

Serves 4

Feast your eyes and your fingers on this spicy take on classic chicken drumsticks!!

 

Prep Time: 10 minutes plus 1 hour to marinate

Cooking Time: 35 minutes

 

Ingredients:

 ½ cups olive oil

4 garlic cloves

1 teaspoon of sea salt

½ teaspoon black pepper

1 tablespoon dried turmeric powder

2 cups fresh parsley

4 whole scallions

Juice from 1 lime

2 tablespoons apple cider vinegar

1 tablespoon coconut aminos

1.5 pound of chicken drumsticks

Parsley or scallion for garnishing

 

Instructions:

 Add all ingredients except drumsticks and garnishes to a blender or food processor and blend until creamy, scraping down the sides of the blender and adding more olive oil as needed.

 Coat drumsticks in the creamy sauce and allow marinating for one hour or overnight in the fridge.

 When ready to cook, fire up your grill to medium-high.

 Place drumsticks on the grill and cook until the chicken skin is blackened and its internal temperature reaches 165 degrees Fahrenheit, about 35 minutes (flipping every 5-7 minutes).

 Alternatively, you can bake these in your oven for 35 minutes at 350 degrees Fahrenheit in a cast-iron skillet.
