Low Carb, Full Flavor Chili

Comfort food is the best when the weather gets colder. A chili soup is a classic and can be enjoyed by the whole family! This one pot low carb chili recipe is quick to prepare and takes little effort to cook. After combing all your ingredients, you can let your soup simmer for a few hours while you relax. The longer you let it simmer the richer and thicker your soup is going to be, just make sure to give it a nice stir every 30 minutes. 

Serves 6

INGREDIENTS

1.5 lbs ground beef
1 cup tomato paste
1 tomato, chopped
1 red bell pepper, chopped
1/2 cup onion, chopped
2 celery stalks, chopped
1½ tsp cumin
2 tsp chili powder
½ tsp pepper
1½ tsp salt
1 cup water

DIRECTIONS

1. In a medium pot, cook ground beef. Drain out fat and add ½ teaspoon salt over meat.
2. Add onions and peppers and cook for 1-2 minutes.
3. Add tomatoes, celery, water, tomato paste, and spices. Reduce to low-medium heat and let it simmer for 1-2 hours. Stir every 30 minutes. Serve hot and top with grated cheese.
