Vegetable & Poppy Seed Quiche
What you will need:
Crust:

1 1/2 cup almond flour

1 Tbsp poppy seed

1/4 cup olive oil (+ 1 tsp if needed)

1⁄4 tsp Salt
-
Pinch of lemon pepper
Filling:

1 egg
-
1 cup mayonnaise
-
1⁄4 cup grated carrot
-
1⁄4 cup grated zucchini
-
1⁄4 cup leek, cut into thin slices
-
2 Tbsps chopped onion
-
1/2 tsp dried parsley
-
Salt and pepper
-
1 tsp of poppy seeds (to sprinkle on top)
How to make it:
Crust:

Preheat oven to 400 F(200°C).

Combine all crust ingredients and knead into a ball.

Press dough into a 6-inch (15 cm) baking pan.

Pre-bake the crust for 10 minutes.

Remove from oven.
Filling:

Mix egg, mayonnaise, carrot, zucchini, leek, onion, dried parsley, salt and pepper.Sprinkle poppy seed over top.

Pour the egg mixture in the pre-baked crust and bake at 350 F (175°C) for about 20-25 minutes, until set and golden brown.

Serve the quiche with salad.
And just like that, you have a perfectly low-carb meal to enjoy with others (or all yourself.. shhh)!
