Vegetable & Poppy Seed Quiche

What you will need:


Crust:

  • 1 1/2 cup almond flour

  • 1 Tbsp poppy seed

  • 1/4 cup olive oil (+ 1 tsp if needed)

  • 1⁄4 tsp Salt

  • Pinch of lemon pepper

 

Filling:

  • 1 egg

  • 1 cup mayonnaise

  • 1⁄4 cup grated carrot

  • 1⁄4 cup grated zucchini

  • 1⁄4 cup leek, cut into thin slices

  • 2 Tbsps chopped onion 

  • 1/2 tsp dried parsley

  • Salt and pepper

  • 1 tsp of poppy seeds (to sprinkle on top)

     

How to make it: 

Crust:

  1. Preheat oven to 400 F(200°C).

  2. Combine all crust ingredients and knead into a ball.

  3. Press dough into a 6-inch (15 cm) baking pan.

  4. Pre-bake the crust for 10 minutes.

  5. Remove from oven.

Filling:

  1. Mix egg, mayonnaise, carrot, zucchini, leek, onion, dried parsley, salt and pepper.Sprinkle poppy seed over top.

  2. Pour the egg mixture in the pre-baked crust and bake at 350 F (175°C) for about 20-25 minutes, until set and golden brown.

  3. Serve the quiche with salad.

 

 And just like that, you have a perfectly low-carb meal to enjoy with others (or all yourself.. shhh)!
