Cauliflower Bacon Gratin

Serves 4

 

This dish takes minutes to prepare but looks fancy, it’s perfect to make for your holiday gathering.  Cinnamon and a pinch of nutmeg and cloves warm this dish up, and extra sharp cheddar cheese brighten up the flavor in this gratin, making it one of our new favorite dishes we’re going to make every year!

 

Prep Time: 5 minutes

Cooking Time: 25 minutes

 

Ingredients:

 2 slices of bacon

1 tablespoon ghee or butter

1 cup heavy whipping cream

1 teaspoon of sea salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon ground cinnamon

Pinch of ground nutmeg

Pinch of ground cloves

2 cups chopped cauliflower

2 ounces of extra-sharp cheddar cheese, grated

1 whole scallion, minced

¼ cup parsley, chopped

 

 

 

Instructions:

 Preheat your oven to 350 degrees Fahrenheit and cook bacon on a baking tray lined with parchment paper until crispy, about 10 minutes.  Set aside and allow to cool.  Once cool, chop into bite-sized pieces. 

 While the bacon is cooking, heat ghee or butter and heavy whipping cream in a medium-sized saucepan on medium-low heat.

 Whisk in sea salt, black pepper, garlic powder, cinnamon, nutmeg, and cloves.

 Add chopped cauliflower and stir occasionally until the cauliflower is soft about 10 minutes.

 Pour the cauliflower mixture into a shallow oven-safe serving dish and top with grated cheese.

 Transfer the dish to the oven and allow the cheese to melt until it begins to bubble about 5 minutes.

 Garnish with bacon and fresh scallion and parsley.

 Store any leftovers in a glass container in the fridge for up to 3 days.
